I got this recipe from a cookbook that had odd names for all of its recipes. The cookbook is called A Dinner A Day. Hopefully, you can use fresh produce in this veggie pie. Have listed reduced fat and vegetarian options.

Ingredients For crazy vegetable pie

  • 1/3 lb
    fresh tomatoes, chopped
  • 1 md
    zucchini, chopped
  • 1 md
    yellow squash, chopped
  • 1/2 lb
    fresh spinach, stemmed and chopped
  • 2
    green onions, sliced
  • 1/4 c
    grated parmesan cheese or vegetarian substitute
  • 1 1/2 c
    whole, lower fat milks, or fat-free milk, or a milk substitute
  • 3/4 c
    biscuit mix, regular or reduced fat
  • 3
    eggs or egg replacer to equal
  • 1 tsp
    worcestershire sauce
  • 2 tsp
    dijon mustard
  • seasoning to taste

How To Make crazy vegetable pie

    Preheat oven to 400°F. Grease a 9 in. quiche or pie plate.

    Rinse all vegetables well. Peel and chop tomatoes. Trim and chop zucchini and yellow squash. After cleaning spinach; then, dry, stem it, and chop it. Trim and slice green onions.

    Scatter all vegetables and cheese over bottom of baking dish.

    In a medium bowl, whisk together next 5 ingredients. Season, and pour egg mixture over items in dish.

    Bake about 30 minutes, or until tests clean with a knife or toothpick.
