This is a child hood favorite. Aunt Alvina made it every year and I begged Many pints off her. She finally gave me the recipe when I was old enough to make it myself. Love this stuff.

Ingredients For corn relish

  • 1 1/2 sm
    dozen ears of corn or 12 large ears cut off cob
  • 1 lg
    head of cabbage chopped
  • 3 lg
    green bell peppers chopped
  • 1 lg
    red bell pepper chopped
  • 1 bunch
    cellery chopped
  • 2 Tbsp
    dry mustard
  • 2 c
    sugar
  • 1/4 c
    salt
  • 1 Tbsp
    cellery seed
  • 1 Tbsp
    mustard seed
  • 2 1/2 tsp
    turmick for color
  • 2 pt
    vinegar
  • 2 lg
    0nion chopped

How To Make corn relish

    In a large dutch oven combine, corn, cabbage,onions, peppers,and celery.

    In large bowel stir remaining ingredents and pour over vegetables.

    Bring to a boil, reduce heat and simmer 10 minutes.

    Divide into prepared hot jars and adjust the lids.

    Process in Water Bath 10 minutes.

    Let stand at least 1 week to blend the flavors. Makes 12-14 pints. Enjoy
