8 1/2 ozbox corn muffin mix

6 ozshredded cheddar, divided
How To Make corn custard casserole

1Saute onion, green pepper, and salt in butter. Combine both cans of corn, eggs, muffin mix, and 1 cup cheese. Mix with onion mixture and place in 1 1/2 quart casserole. Top with remaining cheese and bake at 350 degrees 40 minutes.
