My garden was full of these beautiful tomatoes so it was time to make a tomato pie. An addition of ranch mix takes this to a whole new level. :)

Tomato pie is always a favorite summertime recipe when tomatoes are at their best. This tomato pie recipe is out of this world good. It has an explosion of flavor! The ranch and cheese are the glue that melts everything together (and tastes so good). Fresh tomatoes are complemented by chunks of smoky bacon and sweet onions. As if that wasn't enough, the pie is topped with buttery cheese crackers. This is a fantastic way to use tomatoes when the garden is bursting!

Ingredients For cheesy bacon ranch tomato pie

  • 5 md
    tomatoes, sliced 1/2" thick, lightly salted
  • 1
    deep pie shell, baked
  • 5 slice
    bacon, chopped and cooked along with onion
  • 1 md
    onion, finely chopped (saute this with bacon while cooking)
  • 1 1/2 c
    (total) shredded Monterey Jack and cheddar cheese
  • 1 1/2 c
    Nibs cheese crackers (Ritz crackers ok too), smashed lightly
  • 1/2 c
    mayo
  • 1/2 pkg
    ranch dry mix
  • 1/4 c
    butter milk (reg milk ok)
  • 3 Tbsp
    butter, melted

How To Make cheesy bacon ranch tomato pie

  • Prebaked pie shell.

    Prebake pie shell at 350 for 15 minutes.
  • Bacon and onions cooking together.

    Saute chopped bacon and chopped onions until bacon is done.
  • Sliced tomatoes on a paper towel.

    Place sliced tomatoes on paper towels for a few minutes to soak up some liquid.
  • Ranch, mayo, and buttermilk in a bowl.

    In a medium bowl, mix ranch with mayo and buttermilk (or regular milk).
  • Half the tomatoes in the pie shell.

    Place half of the tomatoes in the baked pie shell.
  • Half of the onions and bacon on top.

    Then sprinkle half of the onions and bacon.
  • Some of the cheese sprinkled on top.

    Then comes half of the cheese.
  • Half of the ranch mixture spread on top.

    Then half of the ranch mixture.
  • Layering process repeated.

  • Crushed crackers added to the top of the pie.

    Top with crushed cheese crackers.
  • Drizzling butter on top of the pie.

    Drizzle melted butter over crackers.
  • Tomato pie baking in the oven.

    Bake for 20-25 minutes.
  • Tomato pie cooling.
