One of our favorite summertime salads is Caprese Salad. I mean we can't get enough of it, especially when garden ripe tomatoes are in season. We found some beautiful bigger than large cherry tomatoes but smaller than Roma tomatoes and came up with these little beauties. They are a "one bite wonder." Not only are they beautiful, they are fun and they just scream summertime and freshness. Fix them for your next BBQ, potluck or dinner party. Your dinner guests and friends will be so impressed! That is IF you can make it out of the house with them. Betcha can't eat just 5! Photo is ours.

Caprese salad is one of my faves! I loved these because they're bite-sized and a perfect party appetizer. The flavors in each bite are fab. Make sure you grab one or two before you put the plate down. These are going to disappear fast! Our store was out of the mozzarella pearls, so we substituted with regular mozzarella. Still came out yumm-o!

Ingredients For caprese salad bites-annette's

  • 1 pkg
    flavorino tomatoes (or any extra large cherry tomato)
  • 1 pkg
    fresh basil leaves
  • 1 pkg
    mozzarella pearls
  • extra virgin "tasting" olive oil
  • balsamic vinegar
  • coarse sea salt
  • black pepper

How To Make caprese salad bites-annette's

  • 1
    Cut tomatoes in half and clean out pulp. Lay in bottom of a dish with a lip on it.

    Season WELL with coarse sea salt and ground black pepper.

    Tear basil leaves and press a piece down inside each tomato half.
  • 4
    Take a mozzarella pearl and press down on the basil leaf to get it to sit inside tomato half.

    Drizzle with olive oil followed by balsamic vinegar.

    Sit out at room temperature so mozzarella has time to get warm and bring out it's natural flavors. GOBBLE UP and ENJOY!!! Make lots because you won't be able to eat just 5 or 10. You'll want more and more.
