Asparagus with Parmesan Vinaigrette

2 lbasparagus

1/2 colive oil

1/4 cchampagne vinegar

1 Tbspdijon mustard

1 tspsalt

2 Tbspfreshly grated parmesan cheese plus more for serving

1/4 cbacon cooked and crumbled small
How to Make Asparagus with Parmesan Vinaigrette
- Cut the hard woody parts of the asparagus off. Place a large skillet on stove with about 2 inches of water. Bring to a boil and add some salt. Add the asparagus and reduce heat to medium and cook about 5 minutes.
- In a baking pan whisk the olive oil, vinegar, mustard & salt together. Stir in the Parmesan cheese. Drain the asparagus and add to the vinaigrette. Stir around in the vinaigrette to completely cover all the asparagus
- Remove asparagus to a plate. Sprinkle the bacon over top and add more Parmesan cheese and serve.
