  • 2 lb
  • 1/2 c
    olive oil
  • 1/4 c
    champagne vinegar
  • 1 Tbsp
    dijon mustard
  • 1 tsp
  • 2 Tbsp
    freshly grated parmesan cheese plus more for serving
  • 1/4 c
    bacon cooked and crumbled small

How to Make Asparagus with Parmesan Vinaigrette


  1. Cut the hard woody parts of the asparagus off. Place a large skillet on stove with about 2 inches of water. Bring to a boil and add some salt. Add the asparagus and reduce heat to medium and cook about 5 minutes.
  2. In a baking pan whisk the olive oil, vinegar, mustard & salt together. Stir in the Parmesan cheese. Drain the asparagus and add to the vinaigrette. Stir around in the vinaigrette to completely cover all the asparagus
  3. Remove asparagus to a plate. Sprinkle the bacon over top and add more Parmesan cheese and serve.
