asparagus and carrot crepes

This was the first crepe recipe I ever made. I found this recipe over 30 years ago and thought it sounded good and gave it a try. It was and instant success, my family loved it.

Ingredients For asparagus and carrot crepes

  • 3
    carrots, grated
  • 2 Tbsp
    butter
  • 10-12 oz
    steamed asparagus
  • salt and pepper to taste
  • 6
    crepes
  • fresh grated swiss cheese
  • yogurt or sour cream for serving

How To Make asparagus and carrot crepes

  • 1
    Saute the carrots in the butter.
  • 2
    When carrots are done add the asparagus and cook until hot. Season with salt and pepper.

    Fill each crepe with the asparagus carrot mixture, roll up and put seam side down on a greased baking sheet.

    Top with Swiss cheese and put under a broiler until cheese is melted and bubbly.

    Remove from broiler and serve with a dollop of sour cream or yogurt.
