I was given such a wonderful bag of dates that I had t try them in a carrot salad with some crunchy walnuts added !

Ingredients

  • 24 small
    ( mini) carrots ( or 3 c cut regular carrots), finely chopped
  • 1/2 c
    finely chopped walnuts
  • 1/2 c
    finely chopped pitted dates
  • 1/2 c
    mayonnaise
  • 1/2 tsp
    onion powder
  • 1 Tbsp
    honey
  • 1 Tbsp
    fresh lemon juice

How to Make 24 Carrot Date Walnut Salad

Step-by-Step

  1. Mix together carrots, walnuts and dates.
  2. Add mayonnaise, sugar and lemon juice and blend into carrot mixture.
  3. Cover and refrigerate for 20-30 minutes until ready to serve.
