I grew up on mustard, turnip and collard greens. I remember my grandmother cooking them until they were slippery. lol I still love greens but decided to put a healthy spin on them and cook them in a way to really enjoy the fresh taste of the greens and of course physically benefit by not cooking away the nutritional value. And you know some of my die hard, do it the old school way relatives love this recipe! If you must have smoked meat just toss in some ham pieces or your favorite smoked meat. I use mustard, turnip and kale but you can use your favorite greens. Enjoy!

Ingredients For stir fry greens

  • 1 bunch
    mustard greens
  • 1 bunch
    turnip greens
  • 1 bunch
    kale
  • 1 lg
    red bell pepper
  • 1 lg
    onion
  • 1 clove
    garlic (optional)
  • 1 tsp
    red pepper flakes (optional)
  • kosher salt
  • black pepper
  • 1/4 tsp
    dill, dried
  • olive oil, extra virgin
  • 2 md
    turnips

How To Make stir fry greens

    Add about 2 or 3 tablespoons of extra virgin olive oil or canola oil to a large skillet (more or less depending on the size of your skillet) over medium heat. Chop and add the following vegetables: One medium onion. It don't have to be finely chopped. As a matter of fact with this recipe I like my onion chopped in large pieces. Red bell pepper, 1 to 2 cloves of fresh crush garlic. And last add 2 medium thinly sliced turnips (optional) While this is sautéing on a medium heat. Proceed to prepare your greens.

    Do a rough chop of one bunch each of clean mustard greens, turnip greens and kale. Or your favorite greens. After all bunches are chopped add them to the skillet.

    Proceed to "stir fry" all the vegetables for about 5 minutes or so. The greens will reduce in size. You may add 1/4 to 1/2 cup of chicken stock at this point if you like "pot liquor". Sprinkle with 1/4 tsp dried dill, season with kosher salt and black pepper or red pepper flakes to taste. Cover and cook maybe another 3 minutes depend on how well you like your greens cook. Don't cook too long these greens are pack with great nutritional value and nothing beat the taste of fresh greens cooked just right! Enjoy!
