I love fresh cooked spinach. Since it's only my husband and I at home now, one bunch of spinach is perfect for our meal. If you have 4 people or more, you will need another bunch or double the recipe.

Ingredients For spinach with garlic

  • 1 bunch
    spinach, organic (regular is fine too)
  • 1 clove
    garlic, minced
  • 2 Tbsp
    olive oil, extra virgin
  • 1 Tbsp
    water

How To Make spinach with garlic

    Cut off stems and clean the spinach to remove sand and dirt. I use a colander to rinse it and toss it so it gets very clean. You should have just the leaves and maybe a small amount of stem left on each leaf. Some people leave the stems on- it's a personal choice.

    Mince garlic. In a large non-stick pan (with lid), add olive oil and water. Heat pan to medium heat and add garlic. Stir occasionally and cook for 3-5 minutes until soft and light brown.

    Add spinach on top of garlic. Turn down heat to medium low. Toss the spinach into the oil and garlic. Cover pan for 5 minutes. Turn spinach and re-cover to cook again for another 5 minutes. Spinach is done when it gets soft and loses it's whole leave texture. Serve warm.

    NOTE: Occasionally we will add a bit (1 tsp) of freshly squeezed lemon juice just before serving. This gives it a very fresh taste. Enjoy!
