These low-carb, gluten-free cauliflower tots are so good. Great if you're living a low-carb lifestyle. Even if you're not low carb, they're a delicious and healthy side dish. The tots are best served hot or warm when the cheese it a bit gooey. These are nice and crisp on the outside, warm and cheesy on the inside. The seasoning is just right and keeps them from being bland. You can even add a few extra dashes of hot sauce if you'd like.

Ingredients For primal "tots"

  • 2 c
    cooked, finely chopped caulifower
  • 3/4 c
    Mexican blend shredded cheese (or any other kind)
  • 2 lg
    eggs
  • 1/4 c
    coconut flour
  • 1/8 tsp
    salt
  • 1/8 tsp
    dried basil
  • 3-5 dash
    Franks Red Hot sauce
  • pepper, to taste

How To Make primal "tots"

We divided the dough into 8 equal balls and then flattened them with the spatula after we placed them in the pan. They are delicate once flattened. They need to be nice and brown before flipping or they'll fall apart.

    Combine all ingredients in a bowl.
  • Shaping dough into 8 balls.

    Form into patties.
  • Oil added to the skillet.

    Heat your griddle or skillet to medium-medium high and drizzle with olive or coconut oil.
  • Searing the patties.

    Sear and cook patties for 3-5 minutes on each side.
  • Searing the second side of the patties.

    Eat while hot, or store in the refrigerator until ready to eat.
  • A primal tot cut open with a fork.

    *If you don't have coconut flour, you could always use bread crumbs or cracker crumbs, but then they wouldn't be primal. **Your cooked cauliflower should be tender, but not mushy.
