These little babies are so good, you might never go back to regular tater tots. No potatoes are missed here. Feed them to your kids, your husband even. Stand back and watch their faces... I promise you will not be disappointed!

Blue Ribbon Recipe

These low carb, gluten free cauliflower tots are so good. Great if you're living a low carb lifestyle. Even if you're not low carb, they're a delicious and healthy side dish. The tots are best served hot or warm when the cheese it a bit gooey. These are nice and crisp on the outside, warm and cheesy on the inside. The seasoning is just right and keeps them from being bland. You can even add a few extra dashes of hot sauce if you'd like.

Note: We divided the dough into 8 equal balls and then flattened them with the spatula after we placed them in the pan. They are delicate once flattened. They need to be nice and brown before flipping or they'll fall apart. The Test Kitchen

Ingredients

  • 2 c
    cooked, finely chopped caulifower
  • 3/4 c
    Mexican blend shredded cheese (or any other kind)
  • 2 large
    eggs
  • 1/4 c
    coconut flour
  • 1/8 tsp
    salt
  • 1/8 tsp
    dried basil
  • 3-5 dash(es)
    Franks Red Hot sauce
  • ·
    pepper, to taste

How to Make Primal "Tots"

Step-by-Step

  1. Combine all ingredients in a bowl.
  2. Form into patties.
  3. Heat your griddle or skillet to medium-medium high and drizzle with olive or coconut oil.
  4. Sear and cook patties for 3-5 minutes on each side.
  5. Eat while hot, or store in the refrigerator until ready to eat.
  6. *If you don't have coconut flour, you could always use bread crumbs or cracker crumbs, but then they wouldn't be primal.

    **Your cooked cauliflower should be tender, but not mushy.
