My hubby loves corn on the Cob! And loves spice, so I put this amazing side dish together and he loved it! Going to be a new house favorite ! Enjoy!

Ingredients For mexican corn on the cob

  • 6 lg
    ears of corn
  • 4 Tbsp
    chili powder
  • 2-3 lg
    limes
  • pinch
    salt
  • pinch
    pepper
  • 1/4 c
    chopped cilantro leaves
  • 1/4 c
    fresh queso fresco cheese

How To Make mexican corn on the cob

    Just before cooking, husk the corn, pull off the silky threads, and cut out any blemishes with a pointed knife. Drop the corn into a large pot filled with boiling salted water. Cover the pot and let the water return to a boil again, then turn off the heat and keep the pot covered. After about 5 minutes, remove enough ears for a first serving. You can keep the remaining corn warm in the water for another 10 minutes without its becoming tough.

    Place on a paper towel. Squeeze the juice of the limes out on top of the corn and Rub down with butter and sprinkle chili powder over butter.

    Serve straight away!! And Enjoy! My hubby even put hot sauce on it too! (and hes a Ginger) hehehehe :) My kids loved this and they are 9,7 and 17 months... EnjoY!
