I'm having a hard time finding the words to properly describe how yummy these are, so you'll just have to make them and find out for yourself.

3 to 4 large
tomatoes, sliced, use different colored tomatoes if available
1/3 c
olive oil
1/4 c
red wine vinegar
1 tsp
1/4 tsp
1/2 clove
garlic, crushed
2 Tbsp
snipped parsley
2 Tbsp
finely chopped onion

How to Make Marinated Sliced Tomatoes


  • 1Arrange tomatoes in a large shallow dish. Combine remaining ingredients in a jar; cover tightly and shake well. Pour over tomato slices. Cover and refrigerate for several hours.
