What can I say I love beans, any kind and anyway! Put two kinds of beans together with some spices to make this kick butt dish. (My brother named them) You will get a bit of spicy, sweet and tangy. I buy bulk dried beans, cook down and freeze, but You can certainly use canned, drained and rinsed. Served with a good beef hot dog tonight, but thought might be a nice side dish for good friday.

Ingredients For kick butt veggie beans

  • 1 1/4 c
    pinto beans
  • 1 1/4 c
    cannelini beans
  • 1-2
    pickled jalapeno chopped
  • 1
    shallot chopped
  • 1 Tbsp
    chopped green pepper
  • 2 Tbsp
    prepared salsa
  • 2 Tbsp
    baby rays bbq sauce
  • 1 tsp
    salt
  • 1/2 tsp
    pepper
  • pinch
    red pepper flakes
  • 1 tsp
    cumin
  • cilantro, fresh (optional)

How To Make kick butt veggie beans

  • 1
    Combine all ingredients except fresh cilantro in baking dish. Bake low at 350 for 30min. Serve with fresh chopped cilantro.
