I named this for my best friend, who hated spinach up until the day she died.

frozen chopped spinach, cooked and drained reserving liquid
4 Tbsp
2 Tbsp
2 Tbsp
chopped onion
1/2 c
reserved spinach liquid
1/2 c
evaporated milk
1/2 tsp
black pepper
1/2 tsp
3/4 tsp
celery powder
3/4 tsp
garlic powder
1 tsp
worcestershire sauce
crushed red pepper. to taste
6 oz
grated jalapeno jack cheese
seasoned bread crumbs

How to Make Janet's Favorite Spinach


  • 1Preheat oven to 350 degrees. Grease a small baking dish or casserole dish.
  • 2Melt the butter over low heat. Add onions and cook until softened. Add flour and stir until smooth and bubbly.
  • 3Add the spinach liquid and evaporated milk and cook until thick stirring constantly. Add pepper, salt, celery powder, garlic powder, Worcestershire sauce, crushed red pepper, and cheese. Stir until melted.
  • 4Add spinach and blend very well. Pour into a greased baking dish or casserole and top with breadcrumbs. Bake for 30 minutes. May be frozen.
