These cabbage steaks can be a little tricky when flipping, but they are delicious even if they fall apart a little bit. The garlic and olive oil permeates throughout the cabbage. It's so flavorful. This is a great side dish for anyone, but especially for someone living a low-carb or Keto lifestyle.

    head of green cabbage
  • 2-3 clove
    garlic, smashed
  • 1 1/2 Tbsp
    olive oil
  • salt and pepper
  • olive oil cooking spray, I didn't have the olive kind and used Pam regular, it worked well.

We found smaller heads of cabbage worked best, pulling off the outermost dark leaves before slicing the steaks. We also cut the slices a little thicker than 1". It was easier to flip them that way. Once you lay them on the pan, the outer edges start to undo but they cook crisp and are super yummy.
  • Cabbage cut into slices.

    Preheat the oven to 350 degrees F. Slice the cabbage from top to bottom of the core and then into 1-inch-thick slices.
  • Rubbing garlic into the cabbage.

    Place on a greased cookie sheet or in a baking pan sprayed with cooking spray (an olive oil spray is really good for this recipe). Rub the smashed garlic on both sides of the cabbage slices.
  • Basting each side with olive oil.

    Baste both sides of the slices with olive oil.
  • Sprinkling cabbage with salt and pepper.

  • Baking the cabbage steaks in the oven.

    Bake for 20 minutes.
  • Carefully flipping the cabbage.

    Carefully flip the rounds over. Bake an additional 20 minutes.
