This is a really great way to get picky eaters to eat eggplant. Kids seem to love eggplant this way.

  • 1 medium
    eggplant, peeled and cut into 1-inch cubes
  • 1 large
    onion chopped
  • 1/2 stick
  • 2 large
    eggs beaten
  • 1 c
    cracker crumbs
  • ·
    salt to taste
  • ·
    white pepper to taste
  • 1 can(s)
    cream style corn
  • 1 medium
    red pepper diced
  • 1 c
    grated sharp cheddar cheese

How to Make Eggplant Casserole


  1. Preheat oven to 350 degrees.

    Cook eggplant in water till tender. Drain
  2. Sauté onion in butter, add eggplant and the rest of the ingredients except cheese and transfer to a baking dish.
  3. Sprinkle cheese on top and baked until puffed, about 15 to 20 minutes
