This is a really great way to get picky eaters to eat eggplant. Kids seem to love eggplant this way.

Ingredients

1 medium
eggplant, peeled and cut into 1-inch cubes
1 large
onion chopped
1/2 stick
butter
2 large
eggs beaten
1 c
cracker crumbs
salt to taste
white pepper to taste
1 can(s)
cream style corn
1 medium
red pepper diced
1 c
grated sharp cheddar cheese

How to Make Eggplant Casserole

Step-by-Step

  • 1Preheat oven to 350 degrees.

    Cook eggplant in water till tender. Drain
  • 2Sauté onion in butter, add eggplant and the rest of the ingredients except cheese and transfer to a baking dish.
  • 3Sprinkle cheese on top and baked until puffed, about 15 to 20 minutes
