Over forty years ago, my mom bought an electric knife(all the rage at the time. It came with a small paperback cookbook. I tried this recipe from the book and it's been a favorite of family and friends ever sense. Enjoy!

Ingredients

  • 4
    medium size zucchini, washed
  • 1
    onion, large and peeled
  • 1/2 lb
    mozzarella cheese
  • 2 Tbsp
    butter
  • 1 tsp
    onion salt
  • 1/4 tsp
    oregano
  • 1
    8-oz. can tomato sauce
  • ·
    salt and pepper to taste (optional)

How to Make Delightful Zucchini Mozzarella Casserole- Connie's

Step-by-Step

  1. Preheat oven to 350 degrees.
  2. Cut zucchini into 1/2 inch slices.
  3. Thinly slice onion.
  4. Thinly slice mozzarella cheese.
  5. Cook zucchini and onion slices together in a covered skillet in butter until tender.
  6. Add onion salt, oregano and tomato sauce. Salt and pepper to taste (optional).
  7. Pour mixture into a 1 1/2 quart shallow casserole.
  8. Top with mozzarella cheese slices.
  9. Bake 30 minutes.
  10. Enjoy!
