We were stationed at Charleston Air Force Base in S. Carolina for 13 yrs from 1976-1989. I learned to love grits and the tradition of eating Hoppin' John on New Year's Day for good luck! Even though we don't live there anymore I still keep the tradition, but have tweaked it a little over the years. Hope you like it.

Slow Cooker Crock Pot

Ingredients

  • 1 1/2 Tbsp
    olive oil
  • 1
    medium onion, diced
  • 1/2
    red pepper, diced
  • 1/2
    green pepper, diced
  • 3
    cloves garlic, minced
  • 1 1/2 tsp
    salt
  • 1 tsp
    pepper
  • 1 Tbsp
    dried parsley
  • 1
    handful crumbled bacon, optional
  • 1 tsp
    crushed red pepper (for heat)
  • 2 can(s)
    black eyed peas, 15 oz.
  • 4 c
    cooked rice

How to Make Good Luck Hoppin' John

Step-by-Step

  1. Heat the olive oil and sauté the onion, peppers and garlic until translucent, about 4-5 min.
  2. Stir in the black eyed peas, broth, s & p, and parsley. Add the crumbled bacon if using. Pour all into a slow cooker and cook on low for 3-4 hours.
  3. Serve over the cooked rice. Enjoy. My husband likes to garnish the top of his with fresh chopped onions and more parsley.
