Okay, my family loves Jalapeno Pierogies, yet they are so hard to find...so, I made a concoction of my own. It's fantastic might I add... Such yummy, cheesy, rich goodness. If dieting, this is not the meal for you...unless you're taking a day off Lol....my family just loved this casserole. I used lots of sweet onion, butter, cheeses, sour cream, jalapenos, half n half and last but not least BACON! You wouldn't have to add the Jalapeno...add whatever you like. It will be delicious! I hope you enjoy this casserole as much as my family did. I served with a salad. Enjoy! My photos

Ingredients For pierogi casserole - cassie style

  • 8 oz
    lasagna noodles, cooked, rinsed and drained
  • 5 lb
    potatoes, peeled, chunked, cooked until tender
  • 1/2 c
    sour cream
  • 1 1/2 stick
    butter
  • 1 lg
    sweet onion, chopped
  • 1 lg
    jalapeno, minced ( optional )
  • 4 - 5 clove
    garlic, minced
  • 1 1/2 tsp
    salt
  • 1 1/2 tsp
    pepper
  • 1 - 8 oz
    ( 2 cups ) shredded, sharp cheddar cheese - divided
  • 6 oz
    velveeta cheese, cubed
  • 1/2 - 3/4 c
    half n half
  • 1 tsp
    garlic powder
  • 1 Tbsp
    dried parsley
  • 3/4 lb
    bacon, cooked and crumbled
  • PREP TIME DOES NOT INCLUDE TIME FOR COOKING POTATOES AND NOODLES

How To Make pierogi casserole - cassie style

    First - boil potatoes till fork tender.

    While potatoes are boiling, prepare noodles; rinse and drain.

    In a skillet or dutch oven saute onions, jalapeno and garlic until onions are translucent. Reserve 1/2 cup of onion/butter mixture.

    When potatoes are finished, drain and place in large bowl with the Velveeta, 1 cup cheddar, 1/2 cup sour cream, salt, pepper, parsley, all but 1/2 cup butter / onion mixture, 1/2 - 3/4 cup half n half. Mix potatoes with hand mixer until smooth.

    Preheat oven to 350 degree F. Spray a 9 x 13 casserole dish with nonstick cooking spray.

    Evenly spread half lasagna noodles on the bottom of casserole dish. Spread 1/2 potato mixture. Sprinkle evenly with a hand full of cheese.

    Evenly spread the remainder of noodles over potatoes.

    Spread remainder of potatoes over the noodles. Sprinkle the crumbled bacon evenly. Spread remaining onion/butter mixture over potatoes. Sprinkle with remaining cheese.

    Place casserole in oven for 30 - 35 minutes or until browning and bubbly. Let set for at least 5 minutes before cutting. Now, enjoy this delicious, satisfying pierogi casserole.
