This is nsuch and under appreciated dish. Please try it you won't be sorry. Please don't save it just for St. Patrick's Day. I don't know where or when this recipe came to my family, I just know it has always been there.

Ingredients For colcannon

  • 4 Tbsp
    bacon drippings
  • 1 lb
    cooked mashed potatoes
  • 1/2 lb
    cabbage shredded(traditional is green but red is good as well)
  • 1/2 lb
    onions chopped
  • 1/2 lb
    bacon cut into cubes
  • 1 pinch
    parsley
  • 3 Tbsp
    butter to mix in the colcannon

How To Make colcannon

  • 1
    Melt the drippings or crisco in a skillet. Add potatoes, cabbage and onions. Cook until browned.

    Add bacon and continue to cook until bacon is cooked. Season with salt and pepper and serve on a large platter top with chopped parsley.

    Add 3 Tbl. butter to melt in.
