Every year I make a special dinner for my family on valentines day. This year we were snowed in; I had to see what I had on hand. I had some potatoes, sweet vidalia onions and asiago cheese, came up with this dish. It went perfect with the bacon wrapped filet mignon w/ balsamic onion I made. My hubby and daughter loved the meal hope you enjoy it as much as we did.
