Almost Paleo Cranberries and Breakfast Crepes

the actual crepe recipe yields 8 or more
the filling will do 4 crepes enough for two people
How to Make Almost Paleo Cranberries and Breakfast Crepes
- Add cranberries, sugar and cinnamon to a pan with 3 cups water and sugar and bring to boil and simmer until thickened.
We had some as dessert last night and made crepes for breakfast today.
- CREPE RECIPE
1 1/2 c spelt or almond flour
2 c cold oat milk
2 Tbsp honey
1/2 tsp baking powder
1/8 tsp salt
mix together ingredients and fry in a hot pan to make thin crepes for recipe below
- cranberry cream cheese crepes
Combine an 8 oz package of room temperature cream cheese with 1/2 cup cranberry sauce from recipe above. mix well and put into four crepes and roll them closed. put two on each plate and microwave 30 seconds to warm slightly and serve.
