Back as a senior in high school, my mom and I lived alone together ... my sister was in college & my father had died. I did a lot of the cooking, and experimented a lot with recipes. This is basically a Quiche Lorraine recipe that I adapted for us ... to me it's the best quiche you'll ever eat. Even the men in my life have enjoyed it!

Ingredients For teri's quiche

  • 1
    deep dish pie shell
  • 1 1/2 c
    swiss cheese, grated
  • 1/2 c
    green onions, chopped
  • 12 oz
    evaporated milk (1 can)
  • 1/4 tsp
    nutmeg
  • 9 slice
    bacon
  • 4
    eggs, beaten
  • 1/4 tsp
    salt
  • dash
    cayenne pepper

How To Make teri's quiche

  • 1
    Poke fork holes into bottom of pie shell and bake for 5 minutes at 350 degrees

    Cook bacon until crisp and crumble into small pieces.

    Sprinkle bacon, cheese, and onions in bottom of pie shell (reserve about 1 tsp of bacon and 1 tsp of onion as a topping.

    Add milk and seasonings to beaten eggs.

    Pour liquid mixture into pie shell over chees, bacon and onions.

    Bake for 45 to 50 minutes, or until a knife inserted in the center comes out clean. Sprinkle with reserved bacon and onion.

    Let set up for 5 minutes before cutting and serving.
