Ingredients

  • 3
    squash, fresh
  • 1 small
    onion, diced
  • 1/2 stick
    butter, room temperature
  • 1 c
    cream
  • 1 1/2 c
    cheddar cheese, shredded
  • ·
    salt and pepper

How to Make Keto Squash Casserole

Step-by-Step

  1. Slice the squash thin with a knife or mandolin and preheat oven to 350 degrees.
  2. In a pan, add butter and onions.
  3. Add the sliced squash and saute for 5 minutes.
  4. Salt and pepper to taste.
  5. Add cream.
  6. Add 1 cup of cheese.
  7. Combine well and let the cheese melt.
  8. Transfer to a baking dish and top with 1/2 cup of shredded cheese.
  9. Bake at 350 for 30 minutes or until golden brown. Let cool before serving.
