I have been making this recipe for Thanksgiving for decades. Since my hubby is Hawaiian, it's our way of bringing the Islands to our holiday table. Our 30 year old "baby", who wasn't even born when I started making this for the holidays, has adopted this recipe and switches out the marshmallows for a chopped Pecans and brown sugar crumble.

Ingredients For hawaiian style sweet potato casserole

  • 2 lb
    sweet potatoes
  • 1 can
    pineapple tidbits in unsweetened juice (14 oz)
  • 4 Tbsp
    butter, cold
  • 4 Tbsp
    brown sugar, dark firmly packed
  • 1 tsp
    salt
  • butter, room temperature
  • 1 pkg
    marshmallows, see notes

How To Make hawaiian style sweet potato casserole

  • Roasting sweet potatoes in the oven.

    Heat oven to 400 degrees. Scrub unpeeled sweet potatoes. Place on a cookie sheet, bake for 30 minutes, then puncture several times with a fork. Cook an additional 20 to 30 minutes until tender.
  • Mashed sweet potatoes in a bowl.

    Cool, peel, and mash in a bowl.
  • Reducing the oven temperature.

    Reduce oven temperature to 350 degrees.
  • Draining the pineapple.

    Drain pineapple tidbits, reserving the liquid.
  • Butter, brown sugar, and salt added to mashed sweet potato.

    Melt butter in a bowl in the microwave. Add butter, brown sugar, and salt. Combine with mashed sweet potatoes.
  • Pineapple juice and tidbits added to the mashed sweet potatoes.

    Stir pineapple juice into potato mixture until it reaches the desired consistency. Fold in the reserved pineapple tidbits.
  • Mixture poured into a baking dish.

    Butter a 2 quart, shallow casserole dish. Spoon potato/pineapple mixture into the prepared dish.
  • Dish covered with foil and in the oven.

    Cover with foil and bake until heated through (about 20 minutes).
  • Marshmallows added to the top of the casserole.

    Remove the pan from the oven. Cover the top with marshmallows. Return to oven, uncovered, and bake until marshmallows are browned as desired. Serve.

    NOTES: You can use any size marshmallows you desire; if using jumbo, cut in half before placing on top of the heated potato mixture.
