Ingredients For tasty thai-style fried rice

  • 1 Tbsp
    fresh ginger, minced
  • 2 Tbsp
    vegetable oil
  • 1 1/2 c
    long-grain rice, uncooked
  • 2 1/4 c
    chicken broth
  • 1/4 c
    coconut milk
  • 1/4 c
    raisins
  • 2 Tbsp
    light soy sauce or tamari
  • 1 Tbsp
    fresh lime juice
  • 1 Tbsp
    curry powder
  • 1/2 tsp
    chinese chili sauce
  • 1/2 tsp
    salt
  • 1/2 tsp
    lime rind
  • 1/2 c
    green onions, chopped finely
  • 1/2 c
    fresh pineapple, diced
  • 1/3 c
    toasted slivered almonds
  • 2 Tbsp
    fresh lime juice

How To Make tasty thai-style fried rice

    In a large skillet, saute ginger in oil until tender.

    Add rice to the skillet, stirring well to coat - approx. 5 minutes. Add broth; then add coconut milk through grated lime zest.

    Bring rice to a boil; then reduce heat and simmer (covered) about 20 minutes until rice is tender and liquid has been absorbed.

    Once done, add green onions, pineapple, almonds and lime juice.
