  • 2 Tbsp
    vegetable oil, divided
  • 1
    egg, slightly beaten
  • ·
    ground black pepper, to taste
  • 1/2 c
    chopped spam
  • 1 clove
    garlic, peeled and minced
  • 1 1/2 c
    cooked rice, cold
  • 1 Tbsp
    soy sauce, or more to taste
  • 1/3 c
    cooked vegetables (peas, diced carrots, corn, etc)
  • 2
    green onions, thinly sliced

How to Make Spam Fried Rice for 2


  1. Heat 1 tablespoon oil in a large skillet or wok on high heat. Add egg, salt and pepper and lightly scramble. Remove to a plate.
  2. Add remaining oil to pan. When hot, add Spam and garlic and cook until lightly brown-DO NOT BURN GARLIC!
  3. Add rice (break up any chunks first). Stir in soy sauce and keep stirring until rice is heated through.
  4. Add cooked vegetables, green onions, and cooked eggs. Heat through and serve.
