Ingredients For carribean style red beans & rice

  • 1 Tbsp
    extra virgin olive oil
  • 1 sm
    onion, diced
  • 1 sm
    red bell pepper, finely diced
  • 4 clove
    garlic, minced
  • 1 c
    long grain white rice
  • 1/2 tsp
    all spice berries
  • 1/2 tsp
    whole cloves
  • 1 tsp
    sliced, fresh ginger root
  • 2 1/2 c
    vegetable broth
  • 1 can
    red beans, drained and rinsed
  • 2 tsp
    chopped fresh thyme or 1 tsp. dried crushed thyme
  • freshly chopped cilantro or fresh parsley for garnish
  • salt & pepper to taste

How To Make carribean style red beans & rice

    heat olive oil in pan.

    Add onions & peppers. Saute' until softened and fragrant. Add garlic and saute for a few minutes more.

    Add rice and saute' until rice has browned a bit.

    Pour in the 2 1/2 cups vegetable broth.

    Place ginger, cloves and allspice in a tea ball or tie up in a coffee filter or cheese cloth. Add them to pan then add beans and chopped thyme. Cover and turn heat to low.

    Cook about 20 minutes or until all of liquid has absorbed.

    Remove tea ball. Add salt and pepper to taste, and chopped cilantro or parsley. Gently fluff with a fork.
