Ingredients For twice baked potatoes

  • 4
    large baking potatoes (2 lb.)
  • 2 Tbsp
    butter
  • 1/2 c
    shredded sharp cheddar cheese
  • 1/4 c
    chopped green onion
  • 1/2 c
    sour cream
  • 1/2 c
    ranch style dressing
  • 1/2 c
    grated parmesan cheese

How To Make twice baked potatoes

    Pierce potatoes in several places with tip of sharp knife.

    Bake at 400 degrees for 1 to 1-1/4 hours or until tender Reduce oven temperature to 350 degrees.

    Immediately cut a thin slice off top of potato; scoop out centers, leaving 1/4 inch thick shells.

    Beat potato pulp, ranch dressing, butter, cheddar cheese, green onion, and sour cream with mixer until well blended. Spoon into shells; top with the parmesan cheese.

    Bake 20 minutes.

    Potatoes can be baked in the microwave. Pierce potatoes, then microwave on high 12 to 14 minutes, turning after 6 minutes. Let stand for 5 minutes. Stuff potato shells, then bake in oven as directed.
