This came from the "My Great Recipes" collection which I subscribed to in the mid-80's. It was a favorite dish of my oldest son who passed away from muscular distrophy in 2003 at age 13. You can substitute other cheeses, we usually use cheddar because we're all addicted to it. ;)

Ingredients For tuna stuffed potatoes

4large hot baked potatoes
-
1/2 chot milk
-
2green onions, minced
-
1egg
-
2 Tbspbutter
-
1 tspsalt
-
1 dashpepper
-
1medium tomato, diced
-
1 cantuna (7-1/2 oz), drained
-
2 Tbspgrated parmesan cheese
-
parsley for garnish
How To Make tuna stuffed potatoes

1Heat oven to 400 degrees.

2Cut thin slice from flat side of each potato. Scoop inside of potatoes into bowl. Mash, add hot milk, and whip until fluffy.

3Add green onions, egg, and butter, whipping well.

4Add salt & pepper, then fold in tomato and tuna.

5Pile back into potato skins, mounting high. Place on cookie sheet.

6Bake for 10 minutes or until heated through.
