We've had this at our family reunion for years! It's always been a hit with everyone. I always bake the potatoes a day or two before and refrigerate. It makes cooking time very short!

Creamy and loaded with flavor, this fantastic baked potato casserole is meant to serve a crowd. The sour cream mixture with ranch adds tons of flavor. We love the addition of green chiles to give this side dish a Tex-Mex feel. It's layered with lots of cheese and topped with bacon and bits of green onion. Yum!

Ingredients For texas baked potato casserole

  • 8-10 lg
    potatoes, baked
  • 2 stick
    butter, softened
  • 32 oz
    sour cream
  • 10 slice
    bacon, fried
  • 1 bunch
    green onions, sliced
  • 1 can
    green chilies, drained & chopped (4 oz)
  • 4 c
    cheddar cheese, shredded
  • 1 pkg
    ranch dressing, dry
  • salt and pepper, to taste

We used 8 large Russet potatoes and got 3 layers of potatoes. If you're uncomfortable with a mandolin, use a sharp knife to slice the potatoes making sure they are uniform in thickness.
  • Ranch dressing, green chilies, and sour cream in a bowl.

    Bake potatoes and refrigerate the night before. They are easy to handle when you go to slice them. Mix ranch dressing, green chilies, and sour cream the night before. It gives it time to marry the flavors (but not necessary).
  • Crumbled bacon on a paper towel.

    Also, go ahead and fry the bacon and crumble it. Stick in the refrigerate overnight.
  • Slicing green onions.

    Also, slice the green onions and put them in the refrigerator. The more you do the night before, the easier it is the day of the BBQ or party. It's easy peasy!
  • Potatoes sliced thin.

    Preheat oven to 350 degrees. Slice potatoes with a mandolin (that way potatoes warm evenly). Use a casserole dish 9X13 or larger if you have one. Spray with PAM or whatever you like, or even butter it. You don't want it to stick.
  • A layer of sliced potatoes in a baking dish.

  • Cheese sprinkled over the sour cream.

    Top with bacon and bake for 35-45 minutes.
  • Green onions sprinkled over the casserole.

    Once baked, top with green onions. I usually put the green onions in a bowl, set them aside, and let them help themselves as some don't like onions at all. Enjoy!
