These are amazing with chili or stews. If you use a whisk to mix the dry ingredients before you add the wet their is no need to sift the dry ingredients.

Ingredients For sweet potatoe drop biscuits

  • 1 c
    mashed cooked sweet potatoes
  • 3 Tbsp
    canola oil
  • 1 Tbsp
    pure maple syrup
  • 1 tsp
    braggs apple cider vinegar
  • 1/2 tsp
    salt
  • 1 c
    whole wheat pastry flour
  • 2 tsp
    baking powder
  • 1 tsp
    ground nutmeg
  • 2-3 Tbsp
    cold water

How To Make sweet potatoe drop biscuits

    Preheat the oven to 400 F. and I use a silicone mat on my cookie sheet. you can use a Silpat or parchment paper. whatever you are familiar with.

    In a medium-sized bowl, mix together the mashed potatoes, oil, maple syrup, Braggs apple cider vinegar, and salt.

    Mix together in another bowl with a wire whisk. flour, baking powder, and nutmeg.

    Fold the Dry ingredients into the wet with a wooden spoon until the dry ingredients are moist and crumbly; be careful not to over mix. add 2 tablespoons of water and lightly knead 5 or 6 times until the dough holds together, adding extra water if needed. Don't knead too much or it will toughen the biscuits.

    Drop the dough in golf ball-size pieces onto the prepared baking sheet. Bake for 12-15 minutes, or until the tops are lightly browned and firm to touch.
