I worked in a hospital kitchen for several years and a co-worker and I came up with this recipe when we had to work one Super Bowl Sunday. It went over so well, the staff asked for it all the time!

This hearty potato side dish is sure to feed all your fellow football fans. It's full of the toppings you crave on game day - cheesy and spicy queso, smoky bits of bacon, ranch flavor, and crunchy French fried onions. Yum! You'll see in the photos we did add some pickled jalapenos to give the dish a little kick. Barb also suggests sausage or ground beef which we think sounds delish too.

Ingredients For super bowl taters

  • 6 lg
    baking potatoes; baked
  • 1 jar
    cheese queso dip; 15 oz
  • 1 jar
    real bacon bits (or use your own crumbled bacon); 3 oz.
  • 1 can
    French fried onions; 6 oz.
  • 2 Tbsp
    dry ranch dressing

If you don't have any pre-cooked potatoes, then use uncooked ones. Bake covered for 45 minutes, uncover and bake for 10 minutes more.
  • Cubed potatoes in a baking dish.

    I like to use potatoes that have been cooked the day before. Slice them into wedges (leave the skins on) and place into a 9x13 greased baking dish.
  • Ranch mix, queso, bacon bits, and French fried onions on top of potatoes.

    Sprinkle with dry ranch mix. Dollop cheesy queso dip over potatoes. Sprinkle real bacon bits all over. Layer French onions over the top (about 2/3 of the can).
  • Baking dish covered in foil and baking in the oven.

    Place in a 350-degree oven covered with foil for the first 15 minutes.
  • Foil removed and baking until browned.

    Then uncover and continue to bake until bubbly and the onions are browned. Serve hot. YUM!

    You can add shredded cheddar over top. You could add jalapenos, black olives, whatever you like to make it your own. Even some cooked ground beef or spicy sausage to make it a main dish. It's a winner and will satisfy a big appetite. A real crowd pleaser.
