Side Essentials: Dill-Flavored Golden Potatoes

Andy Anderson !

This is an easy side dish to construct, and they come out of the oven with a wonderful hint of vinegar and dill. The only potato that I have tried with this recipe are the small golden variety; however, you might try other varieties and see what happens.

After trying several different garnishes, I believe that simple is best. So, some freshly-grated Parmesan cheese; plus, a sprinkle of sea salt, and freshly ground black pepper are all that they require.

So, you ready… Let’s get into the kitchen.

How to Make Side Essentials: Dill-Flavored Golden Potatoes

  2. Gather your Ingredients (mise en place).
  3. Place the quartered potatoes into a large mixing bowl.
  4. Add the water, vinegar salt, and dill seed to a saucepan, and bring to a boil. Or, you could put it into a heatproof measuring cup, and nuke it on high for 2 – 3 minutes.
  5. Pour the boiling liquid over the taters.
  6. Let them sit for 60 to 90 minutes.
  7. Drain and discard the liquid, but do not rinse.
  8. Chef’s Note: Some of the dill seeds will still be clinging to the taters… No worries.
  9. Return the taters to the bowl, and toss with the olive sesame oil, and a pinch or two of salt and pepper.
  10. Add them to the basket of your air fryer, or place them on a parchment-lined baking sheet.
  11. Set the air fryer to 400f (205c), and bake for 18 – 22 minutes, or until nicely browned.
  12. Chef’s Note: If you are using a conventional oven, set the rack to the middle position, use the same temperature, and increase the baking time by 4 – 5 minutes.
  14. Garnish with some freshly-grated parmesan, sprinkle with a bit of salt and pepper, and serve as a starch with your favorite protein, or simply eat them by themselves, with a nice cold chardonnay. Enjoy.
  15. Keep the faith, and keep cooking.
