praline sweet potatoes

Came across this when I was cooking at a restaurant. The delivery truck accidentally sent us pre-mashed sweet potatoes in vacuum bags. Not wanting to take them back, he told us to keep them. We didn't have sweet potatoes on the menu, but I could make whatever I wanted, so I looked in my recipe books & came up with this. It was a regular from then on. I am not a fan of sweet potatoes, except in a pie, but this is gooood.

Ingredients For praline sweet potatoes

  • 2 md
    sweet potatoes, cooked & peeled
  • 1/2 c
    milk
  • 1/3 c
    sugar
  • 2
    eggs
  • 2 Tbsp
    butter
  • 1/2 tsp
    nutmeg
  • 1/2 tsp
    cinnamon
  • CRUNCHY PRALINE TOPPING
  • 2 Tbsp
    butter, melted
  • 3/4 c
    sugar frosted flakes
  • 1/4 c
    chopped pecans or walnuts- i use pecans
  • 1/4 c
    firmly packed brown sugar

How To Make praline sweet potatoes

    Place potatoes in mixer bowl. Turn to low and mix about 30 seconds. Add milk, sugar, eggs,2 tablespoons butter, nutmeg, and cinnamon. Turn to high and beat about 1 minute. Fill small rameikins that have been sprayed with cooking spray about 3/4 full.

    Bake at 400°F for 20 minutes, or until set. It will puff up & start to brown & feel firm to touch.

    Mix all topping ingredients by hand. Spread on hot puff. May make extra & put on if wanted. I always did. Bake 10 minutes longer. Serve warm.

    Cooking time above under prep time does not include the time it took to cook the sweet potatoes to start out with. That will vary on how you do it. I would bake them in a 400° oven until soft for maximum flavor.
