I made turnip pesto and found lots of potatoes in my pantry. I thought I could make something good using both. So I created this recipe!

fresh turnip
1/2 c

walnuts

small garlic cloves
12 tsp

salt

olive oil

How To Make potato salad with turnip pesto

Make turnip pesto. Chop fresh turnip and garlic cloves. Put turnip, garlic, walnuts, salt and olive oil into food processor and process until smooth.

Peel and cut potatoes into bite size. Put potatoes into microwave safe bowl, cover with plastic wrap and heat in a microwave for 5-6 minutes or until tender.

Add turnip pesto and mayonnaise. Mix well. Sprinkle black pepper (optional) and serve.
