Forty years ago I made this casserole for a friend of mine and she decided it should be called Poor Man Stew. My aunt is responsible for the original recipe and she always called this Five Layer Casserole because of the five layers. Recipes get tweaked and changed so often that the original Five Layer Casserole name has become many other things... so from hence forth my version shall be known as Poor Man Stew

Ingredients For five layer casserole

  • 1 - 1/2 lb
    ground beef
  • 1/2 c
    onion, chopped
  • 1 can
    tomato soup
  • 1 can
    cream of mushroom soup
  • 2 c
    fresh carrots, peeled and chopped
  • 4 c
    raw potatoes, peeled and chopped
  • 1/2 c
    milk
  • pepper, freshly ground

How To Make five layer casserole

  • 1
    Preheat oven to 350 Brown beef and onions, drain excess grease and layer on the bottom of a heavy duty dutch oven (with lid)
  • Layer two

    Spread undiluted tomato soup over top beef and onion
  • layer three

    layer peeled, cut carrots over top of tomato soup
  • your choice of potatoes makes layer four

    Add bite sized cut, peeled, potatoes over top of carrots

    Mix milk with mushroom soup and pour over potatoes Season with fresh ground pepper Cover and bake until vegetable are tender
