Potato salad with zucchini and crispy bacon. Since bacon and maple syrup are a great match, I added a bit of maple syrup to the dressing. A sweet and savory potato salad.

Ingredients For maple bacon potato salad

  • 2 lg
    russet potatoes (about 1 lb)
  • 1 md
    zucchini, sliced (about 1 cup)
  • salt, to taste
  • 5 slice
    bacon
  • 1/2 Tbsp
    lemon juice
  • 4 Tbsp
    mayonnaise
  • 1 tsp
    Dijon mustard
  • 1 Tbsp
    maple syrup
  • 1 tsp
    capers, minced (optional)

How To Make maple bacon potato salad

  • Peel and dice potatoes.

    Peel and dice potatoes.
  • Cut zucchini in half lengthwise.

    Cut zucchini into half lengthwise.
  • Cut into thin slices.

    Slice each halved zucchini thinly crosswise.
  • Boil potatoes in salted boiling water.

    Boil water in a saucepan and add a pinch of salt. Put potatoes in the saucepan and cook until tender (6 - 8 minutes).
  • Drain the cooked potatoes.

    When the potatoes are cooked, transfer to the colander to drain.
  • Squeeze lemon juice over the potatoes.

    Pour lemon juice over the potatoes. Let stand.
  • Boil sliced zucchini.

    While the potatoes are cooking, in another saucepan, boil water. Add a pinch of salt. Put zucchini in the saucepan. When it boils again, remove it from the heat.
  • Rinse cooked zucchini.

    Transfer it to the colander to drain. Rinse zucchini in cold running water and drain well.
  • Cook bacon until crisp.

    Cook bacon in a skillet (without oil) until crisp. Then chop.
  • Mayonnaise, Dijon mustard, maple syrup, and capers in a bowl.

    In a bowl, combine mayonnaise, Dijon mustard, maple syrup, and optional minced caper. Mix well.
  • Add potatoes, zucchini, and bacon to the dressing.
