Ingredients For lymon lyme konfetti potato salad

  • 2 1/2 lb
    muti colored potatoes
  • 2 oz
    turkey pepperoni,
  • 3 oz
    black olives
  • 1/2 jar
    capers
  • 3-4 slice
    roasted red peppers, sliced
  • 1/3 lb
    blanched asparagus
  • 1 sm
    sweet onion
  • 1 1/2 Tbsp
    lemon grass, i used frozen chopped
  • 3/4 c
    evoo ( you can use less)
  • 1/8 c
    fresh lemon juice
  • 1/8 c
    fresh lime juice
  • 1 Tbsp
    everglades seasoning
  • 1 Tbsp
    herbes de provence
  • 1/2 Tbsp
    crushed red pepper
  • 3 sm
    garlic cloves

How To Make lymon lyme konfetti potato salad

  • 1
    Slice potatoes. Boil potatoes unitl fork tender
  • 2
    Slice all the veggies, pepperoni and grate garlic
  • 3
    Blanch the asparagus in hot salty water for 3 minutes. Remove and place in an ice bath and drain
  • 4
    Mix evoo, juices, everglades, herbs, red pepper and garlic.

    In a mixing bowl, combine add all veggies, and pepperoni
  • 6
    Add potatoes to veggies and toss well. Put in a large salad bowl and enjoy!
