Next time you mash potatoes, make extra so you can make this tasty side dish the following day. It is really simple and it looks great too. The recipe calls for leftover mashed potatoes. The potatoes should be prepared simply, as I do, with just some butter, milk, salt, and pepper......and not too much moisture. If you double the recipe you will have enough for 8 people for your next barbecue. Baked beans, corn on the cob, and cole slaw would all go well with this. I believe this recipe would be fantastic as you topper for a Shepherd's Pie. I'm going to try that next time I make them.

Ingredients For leftover mashed potato cheese 'n' chive bake

  • 2 1/2 c
    leftover mashed potatoes
  • 1/2 c
    grated parmesan cheese
  • 1 lg
    egg, beaten
  • 1/3 c
    sour cream
  • 1 Tbsp
    fresh chives, finely chopped
  • 2 Tbsp
    fresh italian parsley, chopped
  • 1/2 tsp
    salt
  • 1/8 tsp
    black pepper

    Place all ingredients in a bowl. Stir to mix well.

    Butter a baking dish that just fits the amount of potatoes. Turn potatoes out in to the baking dish. Use the back of a metal spoon to make swirls or divots in the potatoes. They finished dish will look better than a smooth top will, once baked and browned a bit.

    Bake in a 350 degree oven, uncovered, for 35 - 40 minutes.

    Remove from oven and serve hot. They will keep hot/warm for about 15 minutes before serving, if you have other things to finish up. Otherwise, they can be served after resting a few minutes.
