kim's loaded potato bake

My boyfriend and I love to cook together. Today he is making London broil and I am making the side dishes. I wanted a twist on a loaded baked potato and this is what I came up with. It turned out really good so I thought I would share it. Of course you can always adjust the seasonings to your taste.

Ingredients For kim's loaded potato bake

    large potatoes
  • 8
    slices of cooked bacon, chopped into small pieces
  • 1 tsp
    onion powder
  • 1 tsp
    paprika
  • 2 c
    cheddar cheese, shredded
  • 1 c
    green onion, chopped
  • 4 Tbsp
    olive oil
  • 1/2 tsp
    salt
  • 1 c
    sour cream

How To Make kim's loaded potato bake

    Rinse potatoes. Cut into thin bite sized slices leaving on the skins

    Boil potatoes in a pot of water until soft but not mushy.

    Drain water.

    Put potatoes in a bowl with olive oil, onion powder, paprika and salt. Toss potatoes until evenly coated.

    In a single layer spread in baking pan. I used an 11 x 13 pan.
  • Ready to go in the oven

    Sprinkle bacon and cheese evenly over the potatoes.
  • Just out of the oven

    Bake at 425 degrees until cheese is melted. Approximately 10 minutes.

    Remove from oven and top with green onions and sour cream to your preference.
