This homemade poutine is crispy, cheesy, rich, and seriously comforting. Thick-cut fries are made from scratch until golden and crispy, then topped with squeaky cheese curds and a savoury homemade gravy that melts everything together perfectly.

Ingredients

  • FRIES
  • 4 large russet potatoes
  • 2 tablespoons corn starch
  • 6-8 cups vegetable oil
  • 1 teaspoon salt
  • HOMEMADE GRAVY
  • 3 tablespoons butter, room temperature
  • 3 tablespoons all-purpose flour
  • 2 cups beef broth
  • 1 cup chicken broth
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1 teaspoon black pepper
  • TOPPINGS
  • 2 cups white cheese curds

How To Make homemade canadian poutine

  • Step 1
    Peel the potatoes if desired, then cut them into thick fries. Place the fries into a bowl of cold water and soak for at least 30 minutes to remove excess starch. Drain and dry the potatoes very well using paper towels.
  • Step 2
    Toss the dry fries with corn starch until lightly coated. Heat vegetable oil in a deep pot or fryer to 325 degrees F (163 degrees C). Fry the potatoes in batches for about 4–5 minutes until pale and softened, but not browned. Remove them and place on a wire rack or paper towels.

    Increase the oil temperature to 375 degrees F (190 degrees C). Fry the potatoes a second time for about 2–4 minutes until deeply golden and crispy. Sprinkle with salt immediately after frying.

    While the fries cook, prepare the gravy. Melt the butter in a saucepan over medium heat. Whisk in the flour and cook for about 1–2 minutes until lightly golden. Slowly whisk in the beef broth and chicken broth until smooth.

    Add the Worcestershire sauce, garlic powder, onion powder, and black pepper. Simmer for about 5–7 minutes, stirring occasionally, until the gravy thickens enough to coat the back of a spoon.

    To assemble the poutine, place the hot fries onto plates or into bowls. Scatter the cheese curds generously over the fries, then pour the hot gravy over top so the curds begin to soften slightly while still keeping their shape.
