How To Make homemade canadian poutine
-
Step 1Peel the potatoes if desired, then cut them into thick fries. Place the fries into a bowl of cold water and soak for at least 30 minutes to remove excess starch. Drain and dry the potatoes very well using paper towels.
-
Step 2Toss the dry fries with corn starch until lightly coated. Heat vegetable oil in a deep pot or fryer to 325 degrees F (163 degrees C). Fry the potatoes in batches for about 4–5 minutes until pale and softened, but not browned. Remove them and place on a wire rack or paper towels.
-
Step 3Increase the oil temperature to 375 degrees F (190 degrees C). Fry the potatoes a second time for about 2–4 minutes until deeply golden and crispy. Sprinkle with salt immediately after frying.
-
Step 4While the fries cook, prepare the gravy. Melt the butter in a saucepan over medium heat. Whisk in the flour and cook for about 1–2 minutes until lightly golden. Slowly whisk in the beef broth and chicken broth until smooth.
-
Step 5Add the Worcestershire sauce, garlic powder, onion powder, and black pepper. Simmer for about 5–7 minutes, stirring occasionally, until the gravy thickens enough to coat the back of a spoon.
-
Step 6To assemble the poutine, place the hot fries onto plates or into bowls. Scatter the cheese curds generously over the fries, then pour the hot gravy over top so the curds begin to soften slightly while still keeping their shape.
-
Step 7Serve immediately while hot and crispy.
