holiday essentials: slow cooker mash taters

Let’s face it, mash taters are an essential of most holiday tables; however, they can be a bit labor intensive. I mean you have to peel them (maybe you don’t peel), and boil them, mash them, season them. And you have to do all of this while you are making your wonderful holiday dinner. How about cutting down on the hassle by making them in the slow cooker. I've been making my taters this way for years. These are my taters with my way of seasoning them; however, you can do your own seasoning, and make them yours. So, you ready… Let’s get into the kitchen.

Ingredients For holiday essentials: slow cooker mash taters

  • PLAN/PURCHASE
  • 4 lb
    russet potatoes
  • 3 clove
    baked garlic
  • 1/2 c
    fresh sour cream
  • 5 Tbsp
    sweet butter, unsalted
  • 1 tsp
    salt, kosher variety, or to taste
  • 1 c
    fresh chicken stock, not broth, (or you could use water).
  • ADDITIONAL ITEMS
  • cream cheese, softened
  • whipping cream
  • black pepper, freshly ground
  • chopped chives, for garlish

How To Make holiday essentials: slow cooker mash taters

    Chef’s Note: I do not have my usual step-by-step photos for this dish, because I wanted to post it before the Thanksgiving holiday. The main photo was taken last year of the final dish. If I do get a chance to snap a few shots when I prepare them on Thanksgiving, I will add them to the recipe later.

    Gather Your Ingredients (mise en place).

    Get up in the morning, peel (or not) your potatoes, and cut into small pieces.

    Add the potatoes to the slow cooker.

    Add the chicken stock (or water), butter, and salt.
  • 8
    Set slow cooker on low, and leave it alone for 3 or 4 hours.

    After the prescribed time, add the sour cream, baked garlic, and any addition items, such as: cream cheese, whipping cream, pepper... or whatever makes you happy.

    Mash with a fork, potato masher, or hand mixer.

    Do a final check for seasoning and serve. Enjoy.

    Chef’s Note: Do not add any cheese, sour cream, or whipping cream until just before serving. The slow cooking process can cause those items to separate, and even turn brown.

    Chef’s Note: The beauty of this recipe is that you can leave the potatoes in the slow cooker, and forget about them, until you're ready with all the other dishes. And it saves you a burner on your stovetop.
