There must be 1001 Cheese & Potato Casserole recipes out in the world - here's one more. One of my neighbors brought this to our annual springtime block party today and they were gone in a flash. Everyone loved them, so I asked for her recipe. I jotted it down on a paper towel and wanted to get it put here so I didn't lose it. Thought you might enjoy it too.

Ingredients For easy cheesy potato casserole

  • 1 (2 lb.) bag frozen hash brown potatoes, thawed
  • 1 stick butter
  • 1/3 cup evaporated milk
  • 1 can campbell's cream of chicken soup, undiluted
  • 1 (8 oz.) block cream cheese, softened and cut into cubes
  • 1 envelope lipton onion soup mix
  • 2 cups grated, extra sharp, cheddar cheese, divided

How To Make easy cheesy potato casserole

    Preheat oven to 350º F. Spray a 2 Qt. casserole dish with non-stick cooking spray; set aside.

    In saucepan melt butter over medium heat. Stir in the chicken soup, cream cheese and onion soup mix; keep stirring until all blended together.

    Add in evaporated milk and 1 cup grated cheddar cheese. Continue stirring until cheese is melted.

    Pour bag of thawed hash browns into a mixing bowl. Add cheese mixture, and stir until well mixed. Pour into prepared casserole dish and sprinkle with remaining 1 cup of grated cheddar cheese.

    Bake until heated through, bubbly and cheese on top is melted and very lightly beginning to brown.
