I love fried potatoes, but I didn't make them much because of the constant standing at the stove, frying and turning until they were finally cooked through. I can remember my mother doing that for what seemed like an eternity. I found a faster way to make this delicious treat and they're just as good as cooking them the long way, so now my family gets to enjoy them much more often. I serve them as a side dish with seafood or chicken or even at breakfast. Mom served them as a side with her pinto beans and cornbread. Hope you all enjoy!

Ingredients For easy breezy country fried potatoes

  • 4-5 md
    potatoes
  • salt and pepper to taste
  • oil for frying (i use canola oil)

How To Make easy breezy country fried potatoes

    Wash, peel and cut up potatoes. Place in microwave-safe bowl and cover with water. Add about 1/2 to 1 teaspoon salt. Microwave on high for about 8 minutes. Drain well.

    Heat oil in frying pan (I love my cast iron). Add drained potatoes to hot oil and fry for about 5 min or until golden brown. Turn and fry on other side until golden. Add salt and pepper to taste, serve hot.

    These potatoes make an excellent side dish at dinner time or at breakfast time with eggs and your favorite breakfast meat or you can smother them in gravy. So much faster and easier and no matter how you serve them, these potatoes are scrumptious! You could also add onion, seasoned salt, green peppers or anything else that you like.
