If you have kids that don't like veggies, try this one at Easter dinner. The Easter Bunny sells carrots that are yellow & orange at Trader Joes-or just use regular orange ones. This makes a very pretty and colorful side dish for Easter or any dinner.

Ingredients

  • 5-7 large
    potatoes - peeled & cut into chunks
  • 1/2 pkg
    TraderJoes frozen carrots rustica (chopped up yellow & orange carrots
  • 1 tsp
    salt
  • 1/2 tsp
    pepper
  • 1/4-1/3 c
    sour cream
  • 3-4 Tbsp
    butter or margarine

How to Make Easter Bunny Mashed Potatoes

Our Trader Joes stopped carrying the suggested carrots so we substituted some of their fresh yellow and orange carrots. It turned out great!

Step-by-Step

  1. Put chopped potatoes & carrots in med/lg saucepan. Cover with warm or hot water and add a pinch of salt.
  2. Bring to a boil. Cook until potatoes are soft enough for a fork to go through easily - 25-35 minutes.
  3. Drain and return to pan. Add sour cream, butter, salt & pepper. Mash with a masher or electric mixer until there are only small pieces of carrots in smooth potatoes.
  4. Serve to family & a bunny if you have one!
    If not, invite a bunny to dinner!
