creamy corn "chowder"

I wanted to find a way to make more corn dishes becaause my daughter loves it. This is very easy and comforting.

Ingredients For creamy corn "chowder"

  • 1/4 c
    chopped onion (i use frozen)
  • 1 Tbsp
    butter or oil
  • 1/4 c
    ham, finely diced (use more if you like)
  • 1-2
    potatoes, cut into small cubes
  • 14 1/2 oz
    can of white corn, drained
  • 14 1/2 oz
    can creamed white creamed corn, undrained
  • 1 can
    evaporated milk, fat free
  • GARNISH
  • shredded cheese and chopped green onions,and bacon
  • you can use bacon in place of the ham, just chop it and fry it up with the onions.

How To Make creamy corn "chowder"

  • 1
    Spray a large sauce pan with a bit of Pam. Melt butter, or add oil and cook onion for about 3 min. Add the ham and cook 3 more min.

    Meanwhile cover potatoes in water and cook in the microwave for 5 min.; drain.

    Add all the ingredients, along with the potatoes to the pan. Bring to a boil, then turn down to low and simmer for 30 minutes. You may want to thicken with flour or add milk to get the consistency you like.

    Serve with the garnish on top if desired.
