  • PLAN/PURCHASE
  • 2 lb
    russet potatoes
  • 2 Tbsp
    sweet butter, unsalted
  • 1/4 c
    whole milk, half & half, or heavy cream
  • 4 oz
    sour cream, room temp
  • 2 tsp
    salt, kosher variety, fine grind, divided
  • 1/4 tsp
    white pepper, freshly ground

    To peel or not to peel… That is the question. I usually leave the peel on; however, the decision to peel or not is totally up to you.

    Mashing Potatoes I am not going to tell you how to mash up your taters, because everyone has their own method. You could use a stick blender, a food processor, a fork, a potato masher… whatever. The same holds true about their consistency. Thick, thin, lumpy, creamy, the choice is yours

    Gather your ingredients (mise en place).

    Add some water to a large pot and bring to a simmer. Add 1 teaspoon of salt, stir to dissolve, and add the taters.

    Allow them to simmer away until a paring knife goes in without resistance, about 35 – 40 minutes.

    If you want the process to go faster, then bring the water up to a boil.

    Drain the potatoes and place them in the empty pot over the turned-off burner.

    The residual heat from the pot will dry up any excess water.

    Add the butter and milk to a small saucepan and warm up enough to melt the butter into the milk.

    Mash the potatoes, using your favorite method, while adding the salt, pepper, sour cream, and the milk/butter mixture.

    Do not add all of the milk/butter mixture all a once. Add a bit at a time until you like the consistency.

    Do a final tasting for proper seasoning.
